Mead Journal: The adventure begins...Again

When I have the primary fementation down for 3 batches.  All made to the same receipie of goodness as my first batch.  IE: Dessert sweet.  Whew, I did 3 batches in one day!  In doing so I have discovered that I want an imersion chiller.  It takes forever to bring a 140 degree of 5+ gallons of must to under 80 degrees.  I even chilled 1/2 the water to put in after the honey disolved.  Ah, well.  Also, it does keep me pretty busy getting things going and the need to pace myself.  I have 2 more batches I want to put together that will be just my standard Rockbiter brew.

Plan for these 3:

1: Vanilla Almond: My first meglathin..W00t.   Mad L33t Skilz go.  Ok, Mead making is fun and intersting to me.

2: Pear Nutmeg:  sort of 1/2 a meglathin and have a mel.  Thinking on finding some organic fruit juict concentrate.  Other option is to buy the pears, blenderize and de-pulp it.  Using 1/2 a whole nutmeg crushed.

3.  Pumpkin spice: Using pumpkin pie type pumpkins, they are smaller and more flavorful.  About 10 pounds is what I want, thinking on getting 3, 3 pounders though.  And then adding a stick or two of cinnamon, prob just one stick about 1 1/2 inch long and 1/2 a whole nutmeg, crushed.
