Racking went well.  Both of them are dryer than I'd like.  I did sweeten them up a little.  2 cups of Brown Sugar in the Vanilla almond,  I did mix in Potasium Sobate, a yeast stablizer to make sure that the sugar will not ferment and have expoloding bottles.  It may a little but not enough to worry about.  I sweetened up the Pear with reagular sugar.  It was also dry.  Although I may just be tasting just regular astringent.  My next batches I am going to record the gravities here when I rack it and then see about calculating the alcohol content when done.  As time goes on, I am perfecting my craft with each batch.  I think I may crack the Pear and Vanilla on my next birthday, which happens to be my 40th.  My 39th is this september 24th.
I came up with less than I hoped in the racking. 7 six-packs on the vanilla almond, and 2 bottles shy of 8 six packs on the pear. Ah well.
