Mead journaling updates yeah! I'll be doing the same thing in my journal fairly soon; I finally couldn't put my life on hold any longer waiting to be sent overseas.
I'm not sure about any interesting and/or complex flavors that I could recommend right now, but I've had great success with one fruit and one spice in a mead. If all goes to plan, my first couple of meads will be a ginger peach and a vanilla raspberry. The ginger peach will be my attempt at recreating my first very successful mead, and the vanilla raspberry. . .well, vanilla tends to bring out other flavors more, and I doubt I can get too much raspberry flavor.
If I were to get experimental, though, I'd likely start with curry. No, seriously, find some fresh garam masala and stick your nose in it. Think coconut, perhaps with something citrus to balance sweetness and give it some acidity. . .I'm going to go make notes now.
