Mead Journal: 2 new batches

Ok, I got 2 new batches going.  Currently they are just simply rockbitter going through their primary.  But one is destined for my Orange Cream Idea.  The other I am not yet certain of yet.  I have been thinking on doing a lemon sage.  I also was toying with the idea of breaking it down to batches of 1 gal each and then going a chocolate, chocolate coffee, coffee, and 2 others that take longer than normal to age so that I can see what it tastes like for a 5 gal batch.  I think 1 gal would work out to about 1 1/2 six packs or 9 bottles.  Not sure. 

Will post OG and pictures and recipie of my show mead when I can find the camera.  These two batches I plan on KNOWING what the alcohol content is.
