This was sent to me from a freind a ways back:

That designs interior office space. They had a
Recent opportunity to do an office project in
NYC.

The client allowed the women of this
Company a free hand in all design aspects.
The client was a company that was also
Run by all women execs.............

The result.........well.....We all know that
Men never talk, never look at each other....
And never laugh much in the restroom....
The men's room is a serious and quiet place...
But now...with the addition of one mural
On the wall......lets just say the men's
Restroom is a place of laughter and smiles.

  
And they say women don't have a sense of humor.

I racked the Vanilla almond mead first.  Still a very good flavor, mostly vanilla.  I am hoping that the almond will come out in aging.  It is sweet but "hot" at the moment.  Another thing that will be fixed by aging.

Racked the 2 rockbiters.

The non-oaked is very good, it does have the "hot" flavor too but I expected this.

The Oaked:  Well, I was not expecting much but the Oaking really smoothed out the flavors compairitively.  I can tell that this is going to be primo.  Already it is much smoother than the non-oaked verson.  I may have to oak the rockbiter and others from now on.  I was not expecting it to be that smooth this early.  I figured you would be able to tell some diffrence at about 2 years into aging.  But no, not even bottled I taste a diffrence.  Wow.  We shall see how this will go.

I did not rack the pear nutmeg yet.  Waiting for it to settle out a bit after moving it.  I will rack it tommarrow.  I thought that fementation was done but no, a week ago I noticed a bit of a froth at the top.  It is a little cloudy and there is about 1/16th of an inch of settlement at the bottom,   I am thinking that this is going to be awesome.  Must remember to wait 1 year at least to crack the bottle.  Should age well.

I am not racking the pumpkin spice at this time.  I may have over done it on the back sweeting of it.  Too sweet.  Ah well.  I also spiced it a bit more as well.  The sweetness should be how I like it.  Very sweet.  Hmm, this may even eventually be good to reduce and make a topping for icecream or a good complement to Ice cream.

Gives me a mind to finally crack out the watermellon mead.  It has been almost a year aging.  I think that it may have mellowed out by now, ofcourse I could be wrong.  I think that I will super-chill it and see if it tastes good that way.
