Mead Journal: Ned's Happy Place and Limey

Ned's Happy Place:
Ned's Happy place looks to be a mellow yet potent batch. It seems to be retaining it's sweetness but a bit less than expected because of the flavor of watermellon juice. It looks to be a very subtle taste. This is at it's antaceptic level. I may be able to bottle it after the next racking. It was fairly clear and lost it's watermellonly look and looks more like standard mead with a nice amber color. Just a little foggy. Some would be able to bottle it now, Me I will rack it one or two more times. It is still sweet, it may be a good drinking mead. Hmm, better cold. It is still about 6 gallons which is why it will last for 2 rackings. To be bottled in September or late August. Faster than the other meads.
Limey:
This mead also is going to turn out very sweet. Hmm, might be overpowering to the lime a bit. Too hard to tell. I can kinda taste the citrus. We shall see. This will also only need 1 more racking, I think. Then bottling. It smells very sweet and it may prove to be a very good batch.
Still iffy on the strawberry and blueberry/straw, becase they dryed way out. But the other two looks to be fabulous. I wonder if the honey infusion to these two will work. Not going to rack these two until Begining to mid august.
Need to get bottles for 22 gallons of mead. That is what the 4 batches apear to be producing. It might go as low as 20 gallons though.
