Jun. 19th, 2008 06:51 pmRacked the Watermellon Mead on Tuesday.
The watermellon mead smelled great as it was fermenting. I think that the 2 1/2 weeks on the primary fermentation has dried it out a bit. Just the first taste the watemellon was very subtle. I think that this may turn out to be a decent batch. We shall know next summer. It still had a lot of random watermellon bits in it and was very cloudy. The amount of volume is still going to be over 6 gallons, so much that I am considering sweeting it up with about 5-7 pounds of more honey as I think that the watermellon juice is taking some of the sweetness out of it. I can't wait until the 4 batches of mead are aged. Stil need to get some more honey and a bit of strawberries for the Blueberry and Strawberry meads. I think that they dried themselves out a lot. I like my mead to be more desert mead in sweetness. The Limey seems to be clearing a lot and I am waiting a bit longer to rack it again. I hope that the heat in the house has not totally ruined the flavors. The copper tube to our swamp cooler on the roof broke and we haven't been able to run it. Ah, well, this may save us some money.
I am pretty sure that I will be able to bottle the Strawberry, Blueberry, and Lime Meads by September. Then it's aging time, hopefully it wont take more than 6 months to age. The Limey might be able to be drank at bottling time. It is turning out to be strongly citrus flavored. Stil going to be a bit sweet but not nearly as sweet as my first mead due to the citrus.
