Mead Journal: Ned's Happy Place

Well the mead is off to a racing start.  Wow, it is fermenting like crazy.  The waterlock hasn't let up and is bubbling almost like it is boiling in their.  It is giving off a pleasant scent.  I hope it turns out well.  Judging by the scent it may turn out to be the best batch I have done so far.  I hope that it doesn't dry itself out.  Hmm, thinking on getting that Potassium Sobanate to stop fermentation.  As far as scents the Lime has a pleasent citrus scent if you get right up on it.  It is bubbly too but not the same agry bubbly.  Just one or two bubbles a min.  That is all to report until I rack them both. Next Racking will be Strawberry and Bluberry with a bit more added to back sweeten it and to flavor the strawberries.
